Do You Hate to Meal Plan? Me Too.
Are you ready to love me? Nomoretogo.com is a lifesaver for those of you who dislike meal planning and hate eating the same foods every week. First off, I’m not sponsored or getting anything for free, I just LOVE this product. Each week you get a list of recipes along with a grocery list. No more planning, no more wasted food. It’s actually amazing.
The best part is the meals seem to never repeat! My husband and I have been using this service for months and I don’t believe we’ve had the same exact recipe twice. It’s actually crazy. Crazy awesome. I grew up with the same meals constantly on rotation and was always bored and tired of what I was eating. Not anymore. Even good food gets boring when you have it weekly.
Nomotetogo.com does have a small monthly fee, but honestly, it’s so worth it when you save hours searching for recipes on the internet.
My Favorite Meal: Peruvian Chicken and Potatoes
INGREDIENTS
- 3/4 pounds boneless skinless chicken breasts
- 1/2 pound Yukon gold potatoes, cut into bite-sized pieces
- salt and pepper, to taste
Spice Mixture (for Chicken)
- 1/2 tablespoon cumin
- 1/2 tablespoon olive oil
- 1/2 tablespoon paprika
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
Cilantro Cream Sauce
- 1/2 cup cilantro
- 1 jalapeno, seeded and chopped
- 1 clove garlic, minced or pressed
- 1/2 tablespoon olive oil
- 1/2 tablespoon lime juice
- 1/8 teaspoon salt
- 1/2 cup mayo
Avocado Cucumber Salad
- 1 cucumber, cubed
- 1 avocado, cubed
- 1 green onion, thinly sliced
- 1 Roma tomato, chopped
- 1-2 tablespoons lime juice
- 1/2 tablespoon olive oil
- 1/4 cup cilantro, chopped
- salt and pepper, to taste
Directions (Chicken and Potatoes)
- Heat oven to 400 while you prepare the rest of the meal.
- Season chicken with salt and pepper.
- Heat olive oil in an ovenproof skillet.
- Add chicken and cook until for 2-3 minutes on each side.
- As the chicken cooks make the spice mixture.
- Transfer the chicken to a spare plate and add potatoes to the same pan.
- Cook until they are golden and crisp on the edges.
- Place the chicken on top of the potatoes and pour the spice mixture over it.
- Transfer to the oven and cook for 20-25 minutes or until the meat and potatoes are fully cooked through.
- While the chicken and potatoes cook, combine all the ingredients for the cilantro cream and blend them together.
- When you take the chicken out slice it and serve over the potatoes with the cream sauce on top.
Directions (Avocado Cucumber Salad)
- Chop and mix all Ingredients in a bowl
- Pro Tip: Mix this in with the chicken and potatoes when you serve.
